Low Carb Recipes that Cause Problems

Here is one of the low carb recipes that caused me to gain a bunch of weight in a short amount of time. I was going by the rule that I can eat as much as I am hungry for, so long as I don't take in more than 16 grams of carb in a sitting, nor 72 grams in a day (kind of like the "Life Without Bread" plan says). But one of my favorite recipes made me gain weight none-the-less.

Needless to say, getting rid of bad recipes is a good strategy to follow when doing any diet.

One of those Low Carb Pudding Recipes

  • 1 package of sugar-free butterscotch pudding (for two cups)
  • 1 quart of whipping cream

Low Carb Recipes Directions:

Mix the pudding mix into the cream. Makes 4 1-cup servings. Note: the pudding mix is at half-strength compared to the recipe on the box, but the pudding firms up just fine, due to the nature of the cream.

I figured that the pudding has a total of 24 grams of carbs. And the cream has negligible carbs. So each serving should contain just a little over 6 grams of carbs. This should not produce much of an insulin reaction.

However, I found that this was one of those low-carb recipes that was too good. I ate the whole batch of pudding in a day, plus some meat and cheese. If I'm not mistaken a quart of cream has about 3600 calories! This was a 4,000 calorie day. Since I love pudding, I did this 3 or 4 days one week, and the scale read 6 pounds heavier the next week. This didn't seem to be water weight, since I lost only one of the pounds the next week with a stricter low carb diet.

I don't know if the nutra-sweet created an insulin spike, or if I just love pudding so much that I can shovel it in way beyond the point where I'm no longer hungry. But if I decide to work this low carb pudding recipe into my diet, I cannot just eat as much as I want. I'm probably better off avoiding it all together.
